Caesar Smash Tacos: A Viral Recipe I Didn’t See Coming
Another recipe that brings home flavor from the viral world of social media.
Caesar Smash Tacos: A Viral Recipe I Didn’t See Coming
As I mentioned in my shawarma cooking post, I’m not a big fan of viral recipes. Little did I know the recommendation I received the other day was exactly that — a viral recipe I didn’t discover until after I’d already made it. It’s so easy you don’t even need social media to pull it together in about 20 minutes.
Why This Recipe Won Me Over
What I liked about this recipe, aside from the time factor, was that I had every ingredient already in the pantry. Normally I’d make my own Caesar dressing — and honestly, it doesn’t take long to put together a fresh batch — but I was tired and didn’t want to dirty another bowl or stretch dinner prep any longer. I took a shortcut and used a bottle of Girard’s Caesar dressing. Call it a time saver.
The Chicken Mixture
I mixed one pound of 93/7 ground chicken with the following seasonings:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp red pepper flakes
- 1 tsp oregano (Greek if you have it — it packs a sharp, peppery, earthy punch)
- ½ tsp smoked paprika
- 1 tbsp dried parsley (I used fresh from the garden at a 3:1 ratio)
I finished the mixture with half a tin of chopped anchovy, a quarter cup of Pecorino Romano (I was out of Parmigiano-Reggiano, but Pecorino worked beautifully), and the zest of one lemon.
After incorporating the spices, I let the mixture rest in the refrigerator for a few hours. When ready to cook, I brought it to room temperature and divided it into 280-gram balls — enough for four smash tacos. I could have stretched it to six; the layer would have been thinner, but the flavor would still have been there.
Cooking the Tacos
Each corn tortilla was placed meat-side down and cooked for 2–3 minutes until brown. I flipped each one, added a generous amount of shredded mozzarella, and cooked for another 1–2 minutes until the chicken was cooked through. I moved them to a wire rack to cool while I prepped the salad.
The Caesar Salad Shortcut
The salad was store-bought — Taylor Farms — which came with breadcrumbs and shredded Parmigiano. Romaine lettuce was running $4.99; the bagged salad came in about a dollar cheaper. I took the economical route. This isn’t my usual move, but the pre-shredded Romaine actually worked out perfectly for topping the tacos.
Plating and the Verdict
Once the tacos had cooled slightly, I heaped the Caesar salad on top, plated them, and folded each one to eat.
The flavor? Excellent. This chicken mixture is bright, savory, and deeply flavorful, combining the earthy, peppery character of Greek oregano with garlic, onion, and a touch of smoky paprika. Anchovies and Pecorino Romano add a rich umami depth that makes the lean chicken taste surprisingly meaty, while fresh parsley and lemon zest bring freshness and a vibrant citrus lift. The result is a Mediterranean-inspired flavor profile that is both hearty and refreshing.
Quick, easy, and genuinely satisfying for any night of the week. Whether or not you knew about this one before I did, it’s worth making your own version.
